There are only a few things about winter that make me happy. Soup is one of them. After being sick with whatever is going around for almost three weeks now, soup is the one thing I could count on. It is the perfect comfort food for a celiac who has numerous food sensitivities. Here are the recipes I have been living off of for the past month. Enjoy and Share!
This gut-warming recipe has been a staple in my fridge this winter. Instead of pork, I used ground chicken and sometimes leave the bacon off, too. In the last batch, I added more kale than it called for and loved it!
Shredded Chicken Verde Bone Broth Soup
The red pepper in this makes it for me! There is enough spice to clear my sinuses, but it doesn’t hurt my super-sensitive digestive system. This is on the menu this wee,k and I am getting crazy, this time by making my own salsa verde instead of buying it. But if you do buy one I suggest one with a little kick and no artificial additives. Oh and add a ton of avocado!
The lemon and ginger are so amazing, not only does it smell good its so good for you! This one is super easy and quick to make, it also is a good one to add more veggies to like mushrooms or carrots!
Who knew this was easy to make? I didn’t, until recently! This recipe gives the no starch option, and from personal experience, it’s pretty darn good! This is the perfect side dish or snack. Over the last few weeks, my appetite was non-existent, this was a great way to get some protein without having to actually eat a hunk of meat or something else that didn’t sound great while battling the flu.
Black beans are the best. And they are so good for you. Did you know black beans are nutrient-dense, have anti-inflammatory properties, help to lower blue sugar and this is the kicker,taste amazing. This soup is in my weekly rotation right now and will be for the remainder of the season.
